The thought on the mind a Westford Academy student every weekday around 10:25 AM is, “What’s for lunch?”

I went to the Westford Academy kitchen to have a look at how the lunch is made. I came to the kitchen early, as food production starts before the first bell and often goes up close to the lunch bell.

After taking a video, I interviewed Colleen Wallace, the head of the cafeteria staff. I asked her multiple questions about the kitchen, food choices, and the health of the food at Westford Academy.

In the topic of health, Wallace said that all of the food is low fat, and that fresh fruits and vegetables, and salads are offered every day. Vegetarian options are pizza, pasta, and salad, and vegan options are only salad.

When asked about the snack bar, she said that the students have an elective choice weather they want to eat healthy or not, and that healthy options such as yogurt parfés and pretzel nut mixes are offered at the snack bar, as well as less healthy options such as cookies and ice cream.
